Acclaimed chef Claudio Sadler of Ristorante Sadler in Milano is among Italy’s most renowned chefs, famous for pairing gastronomic creativity with exceptional commitment to accuracy and tradition. Known for his classic yet innovative dishes, Sadler reinvents the styles and flavors of authentic Italian cuisine with cutting-edge kitchen techniques. He defines his contemporary cooking as ‘modern cuisine in movement’ because, “It never stops. Everyday, something changes.” He continually engages in research, keeping an attentive eye on the nuances of regional cuisine. His menus reflect fresh seasonal ingredients and embrace the latest preferences for lean options.
Sadler’s recipes and presentations are inspired by his childhood in Sesto San Giovanni, by the work ethic and use of natural products he observed when living in Japan, and the bold colors and shapes found in modern art. “Some works of art arouse great emotions in me, and I try to recreate that along with the visual elements in my dishes.”
Sadler followed his culinary training with 13 years of teaching at Milan’s Scuola Alberghieradi Milano. He opened his first restaurant in 1982, in Pavia. He would later co-found Jeunes Restauranteurs d’Europe, an organization that promotes young chefs of exceptional talent. In addition to operating prestigious restaurants in Italy and Japan, Sadler has consulted for magazines and international food corporations, and has earned the distinguished designations of two Michelin Stars and two Gambero Rosso Forks.
